※腎病、痛風症患者,以及尿酸過高人士不宜食用菇菌。
猴頭菇屬菌類,高蛋白、低脂肪,富含維他命A、礦物質、氨基酸及多醣體,可平衡免疫系統,增強抗病力。中醫更指,猴頭菇味甘性平,健脾胃又補虛益腎,有滋補五臟的作用。
配搭潤心肺、補脾胃、養肝腎的食材,包括無花果、淮山、合桃、杞子、蓮子及紅棗,滋陰補虛,補而不燥,任何體質均適合飲用。
材料
猴頭菇、美國無花果乾、乾淮山、杞子、開邊蓮子、合桃、蜜棗、紅棗
份量
每包一煲,約5-6碗
製法
1)猴頭菇清水浸2小時,變軟後擠乾水備用;期間需換水數次,每次換水時將猴頭菇反覆擠乾再吸水。
2)乾淮山及蓮子以清水浸2小時備用。
3)無花果乾、杞子、合桃、蜜棗洗淨。
4)紅棗洗淨去核。
5)凍水(約3公升)落齊料蓋上(杞子宜最後10分鐘才放入),大火滾起30分鐘,轉中細火煲1小時。
※湯包無需加鹽加糖,真正天然營養味道。

Vegetarian Soup with Dried Monkey Head Mushrooms and Dried Figs
Ingredients:Dried monkey head mushrooms, Dried figs, Huai Shan (dried yam), Goji berries, Lotus seeds, Walnuts, Candied dates, Red dates
makes 5-6 bowls
Method
1. Soak monkey head mushrooms in water for 2 hours. Drain, refill with fresh water several times and squeeze the mushrooms throughout the process. Squeeze dry and set aside.
2. Soak Huai Shan and lotus seeds for 2 hours.
3. Rinse dried figs, goji berries, walnuts and candied dates
4. Rinse and de-seed red dates.
5. Put all ingredients into a soup pot (except goji berries which would be put in the last 10 minutes). Add 3 litres of cold water. Cover the lid and bring to the boil over high heat. Boil for 30 minutes. Turn to medium-low heat. Boil for 1 hour. Serve.
※Suggest not to put any salt or sugar to enjoy the natural flavour.
